- 2 cups fresh ripe peaches, peeled and diced

Instructions
- In a large bowl, whisk together flour, sugar, baking powder, and salt.
- In a separate bowl, combine milk, beaten egg, vanilla extract, and melted butter.
- Gently fold the wet ingredients into the dry mixture until just combined.
- Fold in the diced peaches until evenly distributed in the batter.
- Heat about 1 inch of vegetable oil in a heavy skillet over medium heat to 175 °C (350 °F).
- Drop spoonfuls of batter into the hot oil, spacing them out. Fry for 2–3 minutes per side until golden brown.
- Transfer fritters to a paper towel-lined plate to drain excess oil.
- Dust with powdered sugar or cinnamon sugar while still warm, if desired.
Notes
- Add ½ tsp cinnamon or nutmeg to the batter for a spiced flavor.
- Make a glaze with powdered sugar and a splash of milk or lemon juice for a sweet drizzle.
- Drop batter by teaspoons for mini fritters.
- Mix in other fruits like blueberries for variation.
- Reheat in a 175 °C (350 °F) oven for 5 minutes to regain crispiness.
