Ingredients
- 1 cup cottage cheese (full-fat or low-fat)
- 1/2 cup milk (any kind)
- 1/3 cup grated Parmesan cheese
- 2 cloves garlic, minced or 1/2 tsp garlic powder
- Salt and black pepper to taste
- 1 tbsp olive oil or butter
- 8 oz pasta of choice (fettuccine, penne, etc.)
- Fresh parsley (optional, for garnish)
Instructions
- Cook pasta according to package directions. Reserve 1/2 cup of pasta water, then drain.
- In a blender, combine cottage cheese, milk, Parmesan, garlic, salt, and pepper. Blend until completely smooth.
- Heat olive oil or butter in a skillet over low heat. Pour in the blended sauce and cook until warmed through and slightly thickened.
- Add the cooked pasta to the sauce and toss to coat. Add reserved pasta water a little at a time if needed to loosen the sauce.
- Serve hot, topped with extra Parmesan and chopped parsley if desired.
Notes
- Use roasted garlic or sun-dried tomatoes for added depth.
- Add steamed broccoli, sautéed mushrooms, or spinach for extra veggies.
- Stir in grilled chicken or shrimp for added protein.
- Use dairy-free substitutes for a vegan version.
- Reheat with a splash of milk to maintain creaminess.
