Ingredients
- 2 cups all-purpose flour
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1/2 teaspoon garlic powder
- 2 tablespoons dried dill or 1/4 cup fresh dill, chopped
- 3/4 cup chopped dill pickles
- 1/2 cup pickle juice
- 2 large eggs
- 1/2 cup milk
- 1/4 cup vegetable oil or melted butter
Instructions
- Preheat oven to 350°F (175°C). Grease a 9×5-inch loaf pan.
- In a large bowl, whisk together flour, baking powder, salt, garlic powder, and dill.
- In another bowl, whisk together eggs, milk, pickle juice, and oil or melted butter.
- Pour wet ingredients into dry ingredients and stir until just combined.
- Fold in chopped dill pickles evenly.
- Pour batter into prepared loaf pan and smooth the top.
- Bake for 40–50 minutes, or until a toothpick inserted in the center comes out clean.
- Cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.
