Description

This Dill Pickle Bread is a savory quick bread packed with tangy pickle flavor, fresh dill, and a soft, tender crumb. Perfectly unexpected and delicious, it makes a great side, snack, or toastable treat.


Ingredients

  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon garlic powder
  • 2 tablespoons dried dill or 1/4 cup fresh dill, chopped
  • 3/4 cup chopped dill pickles
  • 1/2 cup pickle juice
  • 2 large eggs
  • 1/2 cup milk
  • 1/4 cup vegetable oil or melted butter

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9×5-inch loaf pan.
  2. In a large bowl, whisk together flour, baking powder, salt, garlic powder, and dill.
  3. In another bowl, whisk together eggs, milk, pickle juice, and oil or melted butter.
  4. Pour wet ingredients into dry ingredients and stir until just combined.
  5. Fold in chopped dill pickles evenly.
  6. Pour batter into prepared loaf pan and smooth the top.
  7. Bake for 40–50 minutes, or until a toothpick inserted in the center comes out clean.
  8. Cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.
