Description

This Divorce Salad is crisp, bold, and full of personality. With crunchy greens, punchy dressing, and sharp toppings, it’s a refreshing and confident salad that’s anything but boring.

Ingredients

  • 4 cups romaine lettuce, chopped
  • 1 cup cherry tomatoes, halved
  • ½ cup cucumber, sliced
  • ¼ cup red onion, thinly sliced
  • ¼ cup grated Parmesan cheese
  • ¼ cup croutons

For the dressing:

  • ¼ cup olive oil
  • 2 tablespoons red wine vinegar
  • 1 teaspoon Dijon mustard
  • 1 clove garlic, minced
  • ½ teaspoon salt
  • ¼ teaspoon black pepper

Instructions

  1. In a large bowl, combine romaine, cherry tomatoes, cucumber, red onion, Parmesan, and croutons.
  2. In a small bowl, whisk together olive oil, red wine vinegar, Dijon mustard, garlic, salt, and black pepper until emulsified.
  3. Pour the dressing over the salad and toss to coat evenly.
  4. Serve immediately while crisp and fresh.

Notes

  • Add grilled chicken or chickpeas for extra protein.
  • Top with olives or pepperoncini for more bite.
  • Use a vegan Parmesan alternative to make it dairy-free.
