Ingredients

  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract

  • 1 tsp ground cinnamon
  • 1/4 tsp salt
  • 1/2 cup milk (or buttermilk)
  • 2 cups apples, peeled and diced

  • Optional: 1/2 cup raisins or dried cranberries

Instructions

  1. Preheat oven to 350 °F (175 °C) and grease or line a 9×13-inch baking sheet with parchment.
  2. In a large bowl, beat butter and sugar until light and fluffy.
  3. Add eggs one at a time, beating well after each. Stir in vanilla.
  4. In a separate bowl, whisk together flour, baking powder, cinnamon, and salt.
  5. Add dry ingredients to wet mixture in three additions, alternating with milk, starting and ending with dry ingredients.
  6. Fold in diced apples and optional nuts or raisins.
  7. Spread batter evenly in the prepared pan.
  8. Bake for 25–30 minutes, or until a toothpick inserted comes out clean and the cake springs back when touched.
  9. Cool in pan for 10 minutes before slicing and serving warm or at room temperature.
