A moist and fluffy banana bread that’s simple to make, packed with ripe banana flavor, and perfect for breakfast or snacking.

Ingredients

  • 1 1/2 cups all-purpose flour
  • 1 tsp baking soda
  • 1/4 tsp salt
  • 1/2 tsp ground cinnamon (optional)
  • 3 overripe bananas, mashed
  • 1/2 cup granulated sugar (or mix with brown sugar)
  • 1 egg, beaten
  • 1/3 cup unsalted butter, melted (or neutral oil)
  • 1 tsp vanilla extract
  • Optional: 1/2 cup chopped walnuts, pecans, or chocolate chips

Instructions

  1. Preheat oven to 350 °F (175 °C) and grease or line a 9×5-inch loaf pan.
  2. In a medium bowl, whisk flour, baking soda, salt, and cinnamon.
  3. In a large bowl, mix mashed bananas, sugar, egg, melted butter, and vanilla until smooth.
  4. Gently fold dry ingredients into wet ingredients until just combined.
  5. Fold in nuts or chocolate chips if using.
  6. Pour batter into prepared loaf pan and smooth the top.
  7. Bake for 50–60 minutes, until a toothpick inserted in the center comes out with moist crumbs.
  8. Cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
