Description

Ingredients

  • 1 1/2 lbs boneless skinless chicken breasts, diced
  • 2 tablespoons olive oil
  • 3 garlic cloves, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried dill
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 3 cups cooked rice
  • 1 cup cherry tomatoes, halved
  • 1/2 cup red onion, diced
  • 1 cup cucumber, diced
  • For the tzatziki topping:
  • 1 1/2 cups plain Greek yogurt
  • 1/2 cup grated cucumber, squeezed dry
  • 2 garlic cloves, minced
  • 1 tablespoon fresh dill, chopped
  • 1 tablespoon lemon juice
  • 1 tablespoon olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Preheat oven to 375°F (190°C) and lightly grease a baking dish.
  2. Heat olive oil in a skillet over medium heat. Sauté minced garlic until fragrant.
  3. Add diced chicken, oregano, dill, paprika, salt, and black pepper. Cook until chicken is fully cooked and lightly golden.
  4. In a large bowl, combine cooked rice, cherry tomatoes, red onion, and diced cucumber.
  5. Fold in the cooked chicken and mix evenly.
  6. Transfer mixture to prepared baking dish and spread evenly.
  7. In a separate bowl, mix Greek yogurt, grated cucumber, garlic, fresh dill, lemon juice, olive oil, salt, and black pepper until smooth.
  8. Spoon tzatziki evenly over the casserole.
  9. Bake for 20–25 minutes until heated through and slightly golden on top.
  10. Let rest for a few minutes before serving.
