Ingredients
- 1 1/2 lbs boneless skinless chicken breasts, diced
- 2 tablespoons olive oil
- 3 garlic cloves, minced
- 1 teaspoon dried oregano
- 1 teaspoon dried dill
- 1 teaspoon paprika
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 3 cups cooked rice
- 1 cup cherry tomatoes, halved
- 1/2 cup red onion, diced
- 1 cup cucumber, diced
- For the tzatziki topping:
- 1 1/2 cups plain Greek yogurt
- 1/2 cup grated cucumber, squeezed dry
- 2 garlic cloves, minced
- 1 tablespoon fresh dill, chopped
- 1 tablespoon lemon juice
- 1 tablespoon olive oil
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Instructions
- Preheat oven to 375°F (190°C) and lightly grease a baking dish.
- Heat olive oil in a skillet over medium heat. Sauté minced garlic until fragrant.
- Add diced chicken, oregano, dill, paprika, salt, and black pepper. Cook until chicken is fully cooked and lightly golden.
- In a large bowl, combine cooked rice, cherry tomatoes, red onion, and diced cucumber.
- Fold in the cooked chicken and mix evenly.
- Transfer mixture to prepared baking dish and spread evenly.
- In a separate bowl, mix Greek yogurt, grated cucumber, garlic, fresh dill, lemon juice, olive oil, salt, and black pepper until smooth.
- Spoon tzatziki evenly over the casserole.
- Bake for 20–25 minutes until heated through and slightly golden on top.
- Let rest for a few minutes before serving.
