Ingredients
- 1 pound chicken breast, diced
- 1 tablespoon olive oil

- 2 cloves garlic, minced
- 2 carrots, sliced
- 2 celery stalks, sliced
- 1 cup broccoli florets
- 1 cup zucchini, chopped
- 6 cups chicken broth
- 1 teaspoon salt
- ½ teaspoon black pepper
- ½ teaspoon dried thyme
- ½ teaspoon dried oregano
- 2 tablespoons fresh parsley, chopped
Instructions
- In a large pot, heat olive oil over medium heat. Add the onion and cook until softened.
