Ingredients
- 2 cups cooked, shredded boneless skinless chicken breasts or thighs
- 3 cups cauliflower florets or riced cauliflower
- 4 oz cream cheese, softened
- 1/2 cup sour cream or Greek yogurt
- 1 cup shredded cheddar cheese
- 1 tsp garlic powder
- 1 tsp onion powder
- Salt and pepper, to taste
- 1 tbsp olive oil or butter
- Optional: chopped green onions or parsley for garnish
Instructions
- Preheat oven to 375°F (190°C).
- Steam or roast cauliflower florets until tender; set aside.
- In a large bowl, combine shredded chicken, cooked cauliflower, cream cheese, sour cream, shredded cheddar, garlic powder, onion powder, salt, and pepper. Mix well.
- Transfer mixture to a greased baking dish.
- Bake uncovered for 20–25 minutes until bubbly and golden on top.
- Garnish with chopped green onions or parsley before serving.
Notes
- Swap cauliflower for broccoli or add sautéed mushrooms for added flavor.
- Use mozzarella or pepper jack cheese for different flavors and spice levels.
- Add diced bell peppers or jalapeños for extra heat.
- Thaw and drain frozen cauliflower well to avoid excess moisture.
- Assemble ahead and refrigerate before baking to save time.
