Ingredients
- 4 cups peaches, sliced (fresh or canned, drained)
- 1 cup raspberries (fresh or frozen)
- 1/2 cup granulated sugar
- 1 tbsp lemon juice
- 2 tbsp cornstarch
- Topping:
- 1 cup all-purpose flour
- 1 tsp baking powder
- 1/4 tsp salt
- 1/2 cup sugar
- 3/4 cup milk
- 1/4 cup butter, melted
Instructions
- Preheat oven to 175°C (350°F) and grease a baking dish.
- In a bowl, combine peaches, raspberries, sugar, lemon juice, and cornstarch. Mix well.
- Spread the fruit mixture evenly in the prepared baking dish.
- In another bowl, mix flour, baking powder, salt, and sugar.
- Add milk and melted butter, stirring until a smooth batter forms.
- Pour the batter evenly over the fruit without fully mixing.
- Bake for 40–45 minutes until the topping is golden and fruit is bubbling.
- Let cool slightly before serving.
Notes
- Use frozen fruit directly but adjust cornstarch if needed.
- Add cinnamon or vanilla for extra flavor.
- Use cream instead of milk for a richer topping.
- Let cobbler cool slightly to thicken the filling.
- Serve with vanilla ice cream or whipped cream.
