Description

A warm and comforting cobbler made with juicy peaches and tart raspberries, topped with a soft golden crust that’s slightly crisp on the edges.


Ingredients

  • 4 cups peaches, sliced (fresh or canned, drained)
  • 1 cup raspberries (fresh or frozen)
  • 1/2 cup granulated sugar
  • 1 tbsp lemon juice
  • 2 tbsp cornstarch
  • Topping:
  • 1 cup all-purpose flour
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 1/2 cup sugar
  • 3/4 cup milk
  • 1/4 cup butter, melted

Instructions

  1. Preheat oven to 175°C (350°F) and grease a baking dish.
  2. In a bowl, combine peaches, raspberries, sugar, lemon juice, and cornstarch. Mix well.
  3. Spread the fruit mixture evenly in the prepared baking dish.
  4. In another bowl, mix flour, baking powder, salt, and sugar.
  5. Add milk and melted butter, stirring until a smooth batter forms.
  6. Pour the batter evenly over the fruit without fully mixing.
  7. Bake for 40–45 minutes until the topping is golden and fruit is bubbling.
  8. Let cool slightly before serving.

Notes

  • Use frozen fruit directly but adjust cornstarch if needed.
  • Add cinnamon or vanilla for extra flavor.
  • Use cream instead of milk for a richer topping.
  • Let cobbler cool slightly to thicken the filling.
  • Serve with vanilla ice cream or whipped cream.
