Ingredients

  • 3 medium zucchini, sliced
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1 cup shredded cheddar cheese
  • 1/2 cup grated parmesan cheese
  • 1/2 cup sour cream
  • 1/2 cup breadcrumbs
  • 2 tablespoons butter, melted
  • 1 tablespoon olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon dried oregano

Instructions

  1. Preheat the oven to 375°F (190°C) and lightly grease a baking dish.
  2. Heat olive oil in a skillet over medium heat.
  3. Add the chopped onion and sauté until softened.
  4. Stir in the minced garlic and sliced zucchini and cook for about 5 minutes until the zucchini begins to soften.
