Ingredients
- 1½ cups old‑fashioned rolled oats
- ½ cup peanut butter (or almond/sunflower seed butter)
- ⅓ cup honey or maple syrup
- 2 tablespoons ground flaxseed or chia seeds (optional)
- ¼ cup mini chocolate chips
- 1 teaspoon vanilla extract
- Pinch of salt
Instructions
- In a large bowl, combine oats, nut butter, honey, flax/chia seeds, chocolate chips, vanilla, and salt.
- Stir until well mixed. Adjust consistency by adding more oats if too sticky or more nut butter if too dry.
- Chill the mixture in the fridge for 20‑30 minutes to firm up.
- Roll mixture into 1‑inch balls using your hands or a scoop.
- Store in an airtight container in the refrigerator.
Notes
- Add shredded coconut, chopped nuts, dried fruit, or cinnamon for variety.
- Substitute almond or sunflower seed butter for nut‑free versions.
- Use cacao nibs instead of chocolate chips for a less sweet option.
- Add a scoop of protein powder for extra protein—adjust wet ingredients as needed.
- Freeze for up to 3 months; thaw a few minutes before eating.
