Ingredients

  • 2 cups all-purpose flour
  • 2 tablespoons granulated sugar
  • 2 teaspoons baking powder
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon ground ginger
  • 1/2 teaspoon salt
  • 1 1/2 cups milk
  • 1 large egg
  • 3 tablespoons melted butter or oil
  • 1 teaspoon vanilla extract
  • 2 medium apples, peeled and diced
  • 2 tablespoons butter
  • 1/3 cup brown sugar
  • 1/2 teaspoon ground cinnamon
  • 1/4 cup heavy cream or milk
  • 1/2 teaspoon vanilla extract

Instructions

  1. Start with the caramel apple compote. Melt butter in a saucepan over medium heat.
  2. Add diced apples, brown sugar, and cinnamon. Cook for 8–10 minutes until apples are soft.
  3. Stir in the cream and vanilla and simmer 2–3 minutes until thick and caramel-like. Set aside.
  4. In a large bowl, whisk together flour, sugar, baking powder, cinnamon, nutmeg, ginger, and salt.
  5. In another bowl, whisk milk, egg, melted butter, and vanilla.
  6. Pour the wet ingredients into the dry ingredients and mix just until combined.
  7. Heat a lightly greased skillet over medium heat.
  8. Pour batter onto the skillet and cook until bubbles form on the surface.
  9. Flip and cook until golden and fluffy.
  10. Serve pancakes warm topped with caramel apple compote.
