Description

Ingredients

  • 6 large eggs
  • 1/4 cup milk or cream
  • 1 tbsp olive oil or butter
  • 1 small onion, chopped
  • 2 garlic cloves, minced
  • 12 cups mixed vegetables (spinach, mushrooms, bell peppers, or zucchini)
  • 1/2 cup cooked meat (optional)
  • 1/2 cup cheese (cheddar, feta, or parmesan)
  • Salt to taste
  • Black pepper to taste
  • 2 tbsp fresh herbs (parsley or basil), chopped

Instructions

  1. Preheat oven to 180°C (350°F).
  2. In a bowl, whisk together eggs, milk or cream, salt, and black pepper.
  3. Heat olive oil or butter in an oven-safe skillet over medium heat.
  4. Sauté chopped onion until soft, then add garlic and cook briefly.
  5. Add vegetables and cook until tender.
  6. Add cooked meat if using and stir to combine.
  7. Pour egg mixture evenly over the filling.
  8. Cook on the stovetop for a few minutes until edges begin to set.
  9. Sprinkle cheese on top.
  10. Transfer skillet to the oven and bake for 15–20 minutes until the center is set.
  11. Remove, cool slightly, and garnish with fresh herbs before serving.
