Ingredients
- 2 boneless, skinless chicken breasts
- 1 tbsp olive oil
- 1/2 tsp salt
- 1/2 tsp black pepper
- 1/2 tsp garlic powder (or 1 clove minced garlic)
- 2 tbsp butter, softened
- 4 slices bread (ciabatta, sourdough, brioche, or preferred)
- 4–6 lettuce leaves (romaine, green leaf, or butter lettuce)
- 2 medium tomatoes, sliced
- Optional: 2 tbsp mayonnaise, 2 tsp Dijon mustard, or 2 slices cheese
Instructions
- Season chicken with olive oil, salt, pepper, and garlic powder.
- Grill chicken over medium heat for 6–7 minutes per side, until cooked through (165°F internal temperature). Let rest, then slice.
- Mix softened butter with minced garlic (or garlic powder) to make garlic butter.
- Lightly toast bread, then spread garlic butter on both sides.
- Layer lettuce and tomato slices on the bottom bread slice.
- Add sliced grilled chicken, plus mayo, mustard, or cheese if using.
- Top with remaining bread slice, cut in half, and serve warm.
Notes
- Use chicken thighs for a juicier sandwich.
- Add provolone, cheddar, or Swiss for extra cheesiness.
- Make it spicy with hot sauce or spicy aioli.
- Swap in arugula or spinach for extra greens.
- Use flatbread or a wrap for an easy handheld version.
