Ingredients

  • 2 boneless, skinless chicken breasts
  • 1 tbsp olive oil
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp garlic powder (or 1 clove minced garlic)
  • 2 tbsp butter, softened
  • 4 slices bread (ciabatta, sourdough, brioche, or preferred)
  • 46 lettuce leaves (romaine, green leaf, or butter lettuce)
  • 2 medium tomatoes, sliced
  • Optional: 2 tbsp mayonnaise, 2 tsp Dijon mustard, or 2 slices cheese

Instructions

  1. Season chicken with olive oil, salt, pepper, and garlic powder.
  2. Grill chicken over medium heat for 6–7 minutes per side, until cooked through (165°F internal temperature). Let rest, then slice.
  3. Mix softened butter with minced garlic (or garlic powder) to make garlic butter.
  4. Lightly toast bread, then spread garlic butter on both sides.
  5. Layer lettuce and tomato slices on the bottom bread slice.
  6. Add sliced grilled chicken, plus mayo, mustard, or cheese if using.
  7. Top with remaining bread slice, cut in half, and serve warm.
