Instructions
- Chop broccoli into chunks and pulse in a food processor until it resembles rice.
- In a skillet, heat olive oil or butter over medium heat, add broccoli rice and optional garlic, and cook for 4–5 minutes until tender. Season with salt, pepper, and lemon zest if using.
- In a separate skillet, melt butter over medium heat and sauté garlic for 1–2 minutes until fragrant.
- Add shrimp, season with salt, pepper, and red pepper flakes if using. Cook 2–3 minutes per side until pink and opaque.
- Squeeze in lemon juice and stir to coat shrimp with the sauce.
- Serve shrimp over broccoli rice and garnish with chopped fresh herbs.
Notes
- Ensure shrimp is thawed and patted dry before cooking for best texture.
- Use cauliflower rice as a substitute for broccoli rice if desired.
- Add spinach or zucchini for more vegetables.
- Add white wine to garlic butter for extra depth.
- Grated Parmesan in the broccoli rice adds a cheesy touch.
