Description

This Ginger Lime Chicken and Rice Soup is a comforting, nourishing dish with bright ginger and lime flavors, tender chicken, and hearty rice — perfect for when you need a wholesome, healing meal.


Ingredients

  • 2 cups cooked chicken, shredded or chopped
  • 1 cup cooked white or jasmine rice
  • 1 tbsp fresh ginger, peeled and sliced
  • 2 cloves garlic, minced
  • 1 small onion, chopped
  • 2 carrots, diced
  • 6 cups chicken broth
  • 1 tbsp olive oil or sesame oil
  • 2 tbsp lime juice
  • 1 tsp lime zest
  • Salt and pepper to taste
  • Fresh cilantro or green onions, for garnish

Instructions

  1. Heat oil in a large pot over medium heat. Add onion, garlic, and ginger, and sauté until fragrant, about 2–3 minutes.
  2. Add diced carrots and cook for another 3–4 minutes until slightly softened.
  3. Pour in the chicken broth and bring to a simmer.
  4. Add the cooked chicken and rice to the pot. Season with salt, pepper, and lime zest.
  5. Let the soup simmer gently for about 10 minutes to meld the flavors.
  6. Stir in lime juice just before serving.
  7. Ladle into bowls and garnish with chopped cilantro or green onions.
