Ingredients
- 2 cups cooked chicken, shredded or chopped
- 1 cup cooked white or jasmine rice
- 1 tbsp fresh ginger, peeled and sliced
- 2 cloves garlic, minced
- 1 small onion, chopped
- 2 carrots, diced
- 6 cups chicken broth
- 1 tbsp olive oil or sesame oil
- 2 tbsp lime juice
- 1 tsp lime zest
- Salt and pepper to taste
- Fresh cilantro or green onions, for garnish
Instructions
- Heat oil in a large pot over medium heat. Add onion, garlic, and ginger, and sauté until fragrant, about 2–3 minutes.
- Add diced carrots and cook for another 3–4 minutes until slightly softened.
- Pour in the chicken broth and bring to a simmer.
- Add the cooked chicken and rice to the pot. Season with salt, pepper, and lime zest.
- Let the soup simmer gently for about 10 minutes to meld the flavors.
- Stir in lime juice just before serving.
- Ladle into bowls and garnish with chopped cilantro or green onions.
