Ingredients

Instructions

  1. Cream together the butter and brown sugar until light and fluffy.
  2. Mix in the molasses, egg, vanilla extract, and espresso powder until well combined.
  3. In a separate bowl, whisk together the flour, baking soda, salt, ginger, cinnamon, cloves, and nutmeg.
  4. Gradually add the dry ingredients to the wet ingredients and mix until a soft dough forms.
  5. Chill the dough for at least 30 minutes.
  6. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  7. Scoop dough into balls and place on the baking sheet, spacing them 2 inches apart.
  8. Bake for 10–12 minutes until edges are set and centers are soft.
  9. Cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
  10. Optional: drizzle with melted white chocolate after cooling.
