Description

A rich and comforting British dessert featuring a moist date sponge cake soaked in luscious homemade toffee sauce. This indulgent sticky toffee pudding is best served warm for the ultimate cozy treat.


Ingredients

  • For the pudding:
  • 1 cup pitted dates, chopped
  • 1 teaspoon baking soda
  • 1 cup boiling water
  • 1/4 cup unsalted butter, softened
  • 3/4 cup brown sugar
  • 2 large eggs
  • 1 1/4 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon vanilla extract
  • Pinch of salt
  • For the toffee sauce:
  • 1/2 cup unsalted butter
  • 1 cup brown sugar
  • 3/4 cup heavy cream
  • 1 teaspoon vanilla extract
  • Pinch of salt

Instructions

  1. Preheat oven to 350°F (175°C) and grease a baking dish or ramekins.
  2. Place chopped dates in a bowl. Pour boiling water over them and stir in baking soda. Let sit for 10 minutes.
  3. In a separate bowl, cream butter and brown sugar until light and fluffy.
  4. Beat in eggs one at a time, then add vanilla extract.
  5. Fold in flour, baking powder, and salt.
  6. Stir in softened date mixture (including liquid) until smooth.
  7. Pour batter into prepared dish and bake for 30–35 minutes, until a toothpick comes out clean.
  8. For the sauce, melt butter in a saucepan over medium heat.
  9. Stir in brown sugar and heavy cream. Simmer 3–5 minutes, stirring constantly, until slightly thickened.
  10. Remove from heat and stir in vanilla extract and salt.
  11. Poke holes in warm pudding and pour some sauce over the top to soak in.
  12. Serve warm with additional sauce drizzled over each portion.

  • Serve with vanilla ice cream, custard, or whipped cream.
  • Add a splash of dark rum to the sauce for deeper flavor.
  • Freeze pudding (without sauce) up to 2 months.
