Description

Green Beans Almondine is a light and elegant side dish featuring tender-crisp green beans, toasted almonds, butter, and lemon. It’s fresh, flavorful, and perfect for both weeknight dinners and special occasions.


Ingredients

  • 1 lb fresh green beans, trimmed
  • 1/3 cup sliced almonds
  • 2 tbsp unsalted butter
  • 1 clove garlic, minced (optional)
  • 1 tbsp fresh lemon juice
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • 1 tsp lemon zest (optional, for garnish)

Instructions

  1. Bring a large pot of salted water to a boil. Blanch green beans for 3–4 minutes until tender-crisp.
  2. Drain and transfer green beans to an ice bath to stop cooking and preserve color. Drain again and set aside.
  3. In a large skillet over medium heat, melt butter. Add sliced almonds and toast for 3–4 minutes, stirring frequently, until golden brown and fragrant.
  4. If using garlic, add it in the last minute of toasting to avoid burning.
  5. Add green beans to the skillet and toss with almonds and butter until heated through.
  6. Season with salt, pepper, and fresh lemon juice. Toss to combine.
  7. Serve warm, garnished with lemon zest if desired.
