Ingredients
- 1.5 lbs boneless, skinless chicken breasts or thighs
- 1 cup fresh parsley
- 1/2 cup fresh basil
- 1/4 cup fresh chives
- 2 garlic cloves
- 2 tbsp fresh lemon juice
- 1 tsp lemon zest
- 1/2 cup Greek yogurt or mayonnaise
- 2 tbsp olive oil
- 1/2 tsp anchovy paste (optional)
- Salt and black pepper, to taste
- Optional: sliced green onions for garnish
Instructions
- Add parsley, basil, chives, garlic, lemon juice, lemon zest, Greek yogurt (or mayo), olive oil, anchovy paste (if using), salt, and pepper to a blender or food processor. Blend until smooth.
- Reserve about 1/3 cup of the dressing for serving.
- Place chicken in a bowl or zip-top bag and pour remaining marinade over it, coating well. Marinate in the refrigerator for at least 30 minutes or up to 8 hours.
- Preheat grill to medium-high heat and lightly oil the grates.
- Grill chicken for 5–7 minutes per side, or until internal temperature reaches 165°F (74°C).
- Remove from grill and let rest for a few minutes.
- Slice and serve with reserved green goddess sauce and optional green onions.
Notes
- Use cilantro instead of parsley for a different herb profile.
- Add avocado to the dressing for extra creaminess.
- Works well with shrimp or tofu as a protein swap.
- Chicken can also be baked at 400°F for 20–25 minutes.
- Fresh herbs are key for best flavor and color.
