- For the chicken: 1.5 lbs boneless, skinless chicken breasts or thighs (cut into bite-sized pieces), 2 tbsp olive oil, 1 tsp salt, 1/2 tsp black pepper, 1 tsp paprika, 1 tsp garlic powder
- For the creamy garlic sauce: 2 tbsp unsalted butter, 4 cloves fresh garlic (minced), 1 cup heavy cream, 1/2 cup grated Parmesan cheese, 1/4 tsp salt, 1/4 tsp black pepper, 1 tbsp fresh parsley (chopped, for garnish)
Instructions
- Preheat the grill or grill pan to medium-high heat.
- In a bowl, toss the chicken pieces with olive oil, salt, pepper, paprika, and garlic powder until well coated.
- Grill chicken bites for 2–3 minutes per side, until cooked through (internal temp 165°F / 74°C) and lightly charred.
- While chicken cooks, melt butter in a small saucepan over medium heat.
- Add minced garlic and cook for about 1 minute, until fragrant.
- Pour in heavy cream, stir in Parmesan cheese, and season with salt and pepper.
- Simmer 3–4 minutes, stirring occasionally, until sauce thickens slightly.
- Serve grilled chicken bites with creamy garlic sauce on the side or drizzled over, garnished with fresh parsley.
Notes
- Add a pinch of red pepper flakes to the sauce for a spicy kick.
- Swap Parmesan for Asiago or Romano cheese for a different flavor.
- Marinate chicken in lemon juice and herbs for extra freshness.
- Use Greek yogurt instead of cream for a lighter sauce.
