Ingredients
- 1 1/2 lbs boneless, skinless chicken breasts or thighs, cut into bite-sized pieces
- 1 tbsp olive oil
- 1 tsp garlic powder
- 1/2 tsp paprika
- Salt and black pepper to taste
- Fresh parsley, chopped (for garnish)
- 1 tbsp butter
- 3 cloves garlic, minced
- 1/2 cup chicken broth
- 1/2 cup heavy cream
- 1/3 cup grated Parmesan cheese
- Salt and black pepper to taste (for sauce)
Instructions
- Preheat grill or grill pan to medium-high heat and lightly oil the grates.
- In a bowl, toss chicken bites with olive oil, garlic powder, paprika, salt, and pepper.
- Grill chicken for 3–4 minutes per side, or until golden and fully cooked (internal temp 165°F).
- While chicken cooks, melt butter in a skillet over medium heat and sauté garlic until fragrant (about 1 minute).
- Stir in chicken broth and heavy cream. Simmer until slightly thickened, about 5–6 minutes.
- Whisk in Parmesan cheese, salt, and pepper. Continue cooking until smooth and creamy.
- Serve grilled chicken bites with sauce drizzled on top or on the side. Garnish with parsley.
Notes
- Add lemon juice or red pepper flakes to the sauce for brightness or heat.
- Serve over pasta, rice, or mashed potatoes for a full meal.
- Use half-and-half or milk for a lighter version of the sauce.
- Try this recipe with shrimp instead of chicken for variation.
