Ground Beef Taco Cabbage Skillet is a flavorful, low-carb one-pan meal made with seasoned ground beef, tender cabbage, tomatoes, and melty cheese—perfect for quick, comforting weeknight dinners.

  • Total Time: 35 minutes
  • Yield: 4 servings

Ingredients

  • 1 lb ground beef
  • 1/2 head green cabbage, chopped
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 bell pepper, chopped (optional)
  • 1 tablespoon olive oil or avocado oil
  • 2 tablespoons taco seasoning (store-bought or homemade)
  • 1 can (14.5 oz) diced tomatoes, drained
  • 1 cup shredded cheddar or Mexican cheese blend
  • Salt and black pepper, to taste
  • Fresh cilantro or green onions, chopped (for garnish)
  • Lime wedges, for serving (optional)

Instructions

  1. Heat oil in a large skillet over medium heat.
  2. Add onion and bell pepper (if using) and cook for 2–3 minutes until softened.
  3. Add ground beef and cook until browned, breaking it up with a spoon. Drain excess fat.
  4. Stir in garlic, taco seasoning, and diced tomatoes. Cook for 1 minute to combine flavors.
  5. Add chopped cabbage and stir. Cook for 8–10 minutes, stirring occasionally, until cabbage is tender but still crisp.
  6. Season with salt and pepper. Sprinkle cheese over top and cover skillet until cheese melts.
  7. Garnish with cilantro or green onions and serve hot with lime wedges if desired.

Notes

  • Substitute ground turkey or chicken for a lighter option.
  • Add black beans, corn, or jalapeños for extra bulk and flavor.
  • For extra creaminess, stir in a few tablespoons of cream cheese before topping with shredded cheese.
  • Use bagged coleslaw mix as a shortcut—just omit carrots for low-carb.
  • Freeze leftovers in portions for easy future meals.
