- 4 boneless, skinless chicken breasts
- 1 cup whole wheat breadcrumbs or panko
- 1/2 cup grated Parmesan cheese
- 1 tsp Italian seasoning
- 1/2 tsp garlic powder
- Salt and pepper, to taste
- 2 large eggs, beaten
- 1 cup marinara sauce (low-sugar preferred)
- 1 1/2 cups shredded mozzarella cheese
- Optional: fresh basil or parsley for garnish
- Olive oil or cooking spray
Instructions
- Preheat oven to 425°F (220°C) and line a sheet pan with parchment paper.
- Season chicken breasts with salt and pepper.
- Set up breading station: one bowl with beaten eggs, another with breadcrumbs, Parmesan, Italian seasoning, garlic powder, salt, and pepper.
- Dip each chicken breast into eggs, then coat thoroughly with breadcrumb mixture.
- Place breaded chicken on sheet pan and lightly spray with olive oil or cooking spray.
- Bake for 20 minutes.
- Spoon marinara sauce over each chicken breast and sprinkle with mozzarella cheese.
- Return to oven and bake for an additional 5–7 minutes until cheese is melted and bubbly.
- Garnish with fresh basil or parsley before serving.

- Add sautéed mushrooms or spinach under the cheese for extra veggies.
- Use part-skim mozzarella to reduce fat but keep cheesiness.
- Substitute gluten-free breadcrumbs for a gluten-free version.
