Description

Ingredients

  • For the chicken:
  • 6 chicken thighs
  • 2 tbsp olive oil
  • 2 tbsp honey
  • 1 tbsp chipotle sauce or finely chopped chipotle peppers in adobo
  • 2 cloves garlic, minced
  • 1/2 tsp smoked paprika
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • For the mashed potatoes:
  • 2 lbs potatoes, peeled and cubed
  • 1/2 cup milk
  • 1/2 cup shredded smoked Gouda cheese
  • 2 tbsp butter
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • Optional: fresh parsley
  • Optional: steamed vegetables

Instructions

  1. Preheat oven to 400°F (200°C).
  2. In a bowl, mix olive oil, honey, chipotle sauce, garlic, smoked paprika, salt, and black pepper.
  3. Coat chicken thighs with the mixture and place in a baking dish.
  4. Bake for 30–35 minutes until fully cooked and slightly caramelized.
  5. Meanwhile, boil cubed potatoes in salted water until tender.
  6. Drain potatoes and mash with milk, butter, smoked Gouda cheese, salt, and black pepper until smooth and creamy.
  7. Serve chicken alongside mashed potatoes and garnish with parsley if desired.

  • Adjust chipotle amount to control spice level.
  • Chicken breasts can be used instead of thighs with adjusted cooking time.
