Description

Hibachi Fried Rice is a flavorful and buttery Japanese steakhouse-inspired dish made with cold rice, eggs, veggies, and savory seasonings. It’s quick, budget-friendly, and perfect as a side or standalone meal.


Ingredients

  • 3 cups cooked white rice (cold, preferably day-old)
  • 2 eggs
  • 1/2 onion, finely chopped
  • 2 cloves garlic, minced
  • 1/2 cup carrots, diced
  • 1/3 cup peas (optional)
  • 3 tbsp butter, divided
  • 2 tbsp soy sauce
  • 1 tsp sesame oil
  • Salt and pepper, to taste
  • Optional: 2 tbsp chopped green onions
  • Optional: yum yum sauce, for serving

Instructions

  1. Heat a large skillet or wok over medium-high heat and melt 1 tablespoon of butter.
  2. Add onion and carrots, sauté until softened. Stir in peas if using.
  3. Push vegetables to one side. Crack eggs into the empty space and scramble until cooked.
  4. Add cold rice and break it up with a spatula, mixing with eggs and vegetables.
  5. Drizzle in soy sauce and sesame oil. Season with salt and pepper to taste.
  6. Continue stir-frying until rice is heated through and slightly crisp.
  7. Add remaining butter and stir until melted and glossy.
  8. Garnish with green onions and serve with yum yum sauce if desired.

Notes

  • Use day-old rice for the best texture—fresh rice tends to clump.
  • Add cooked protein like chicken, shrimp, or steak for a full meal.
  • For a low-carb version, substitute cauliflower rice.
  • Adjust soy sauce and sesame oil to taste based on dietary needs.
  • Freeze leftovers in portions and reheat directly from frozen in a skillet.
