Description

Homemade sea salt soft caramels are rich, buttery, and perfectly chewy candies with a hint of flaky sea salt on top. These caramels make a delightful gift or indulgent treat with a luxurious texture and deep caramel flavor.


Ingredients

  • 1 cup granulated sugar
  • 1/2 cup brown sugar
  • 1 cup light corn syrup
  • 1 cup heavy cream (divided)
  • 1/2 cup unsalted butter
  • 1 tsp vanilla extract
  • 12 tsp flaky sea salt (for topping)

Instructions

  1. Line an 8-inch square baking pan with parchment paper and lightly grease it.
  2. In a heavy-bottomed saucepan, combine granulated sugar, brown sugar, corn syrup, butter, and half of the cream.
  3. Heat over medium heat, stirring until sugars dissolve and butter melts.
  4. Once boiling, slowly add the remaining cream while stirring.
  5. Attach a candy thermometer and cook without stirring until the mixture reaches 245°F (118°C).
  6. Remove from heat and stir in vanilla extract.
  7. Pour caramel into the prepared pan and let cool slightly.
  8. Sprinkle with flaky sea salt while still warm.
  9. Allow to cool completely for several hours or overnight at room temperature.
  10. Once set, lift the caramel using parchment and cut into squares with a sharp knife.
