Ingredients
- 1 lb boneless, skinless chicken thighs or breasts, cut into bite-size pieces
- Salt and pepper, to taste
- 1 tsp garlic powder
- 1/2 tsp smoked paprika (optional)
- 2 tbsp olive oil or vegetable oil
- 1/4 cup honey
- 1/2 cup barbecue sauce (your favorite)
- 2 cups cooked rice (white, brown, or jasmine)
- 2 cups water or chicken broth (for cooking rice)
- Optional garnish: chopped green onions, sesame seeds, fresh cilantro
Instructions
- Season the chicken pieces with salt, pepper, garlic powder, and smoked paprika.
- Heat oil in a large skillet over medium-high heat. Add the chicken and cook for 6–8 minutes, flipping halfway until golden and cooked through.
- In a small bowl, whisk together honey and barbecue sauce until smooth.
- Reduce the skillet heat to medium-low. Pour the honey-BBQ sauce over the chicken and stir to coat evenly. Simmer for 2–3 minutes until the sauce thickens.
- Meanwhile, cook rice according to package instructions using water or chicken broth for more flavor.
- Serve the honey BBQ chicken over a bed of hot rice. Garnish with green onions, sesame seeds, or cilantro if desired.
Notes
- Use chicken thighs for juicier meat or breasts for a leaner option.
- Add hot sauce or chili flakes for a spicy version.
- Incorporate vegetables like broccoli or bell peppers for added nutrition.
- Reheat with a splash of water to keep the sauce from thickening too much.
