Ingredients
- 1 lb fresh strawberries, hulled
- 3/4 cup freshly squeezed lemon juice (about 4–5 lemons)
- 4 cups cold water, divided
- 1/2 cup honey
- Ice, for serving
- Optional: extra strawberries or lemon slices for garnish
Instructions
- Blend strawberries in a blender or food processor until smooth. Strain through a fine mesh sieve for a smoother texture, if desired.
- In a small saucepan, combine honey with 1/2 cup water and warm over low heat just until honey dissolves. Let cool slightly.
- In a large pitcher, mix the strawberry purée, lemon juice, honey mixture, and remaining cold water.
- Stir well and adjust sweetness or tartness with additional honey or lemon juice, if needed.
- Chill for at least 30 minutes before serving over ice. Garnish with lemon slices or extra strawberries, if desired.

- Use a mild honey (like clover or wildflower) for best flavor balance.
- Straining the strawberry purée is optional—unstrained gives more fiber and texture.

- Frozen, thawed strawberries can be used in place of fresh.
