Indulgent Creamy Tuscan Sun-Dried Tomato Chicken is a rich, one-pan meal featuring tender chicken simmered in a creamy garlic Parmesan sauce with sun-dried tomatoes and spinach.
Ingredients
- 4 boneless, skinless chicken breasts
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- 1/2 cup sun-dried tomatoes, chopped
- 1 cup heavy cream
- 1/2 cup chicken broth
- 1/2 cup grated Parmesan cheese
- 1 teaspoon dried Italian seasoning
- 1/2 teaspoon paprika
- 1 cup fresh spinach
- Salt to taste
- Black pepper to taste
Instructions
- Season the chicken breasts on both sides with salt, black pepper, and paprika.
- Heat olive oil in a large skillet over medium heat and sear the chicken for 4–5 minutes per side until golden brown. Remove and set aside.
- In the same skillet, sauté the minced garlic for about 30 seconds until fragrant.
- Add the chopped sun-dried tomatoes and cook briefly to release their flavor.
- Pour in the chicken broth, scraping up any browned bits from the bottom of the pan.
- Stir in the heavy cream, Parmesan cheese, and Italian seasoning. Simmer for a few minutes until the sauce slightly thickens.
- Return the chicken to the skillet, spoon sauce over the top, cover, and simmer for 10–12 minutes until the chicken reaches an internal temperature of 165°F (74°C).
- Stir in the fresh spinach and cook until wilted.
- Adjust seasoning if needed and serve warm with sauce.
Notes
- Add sliced mushrooms for extra depth of flavor.
- Substitute half-and-half for heavy cream for a lighter version.
- Add a splash of white wine before simmering for added complexity.
- Serve over pasta, rice, or mashed potatoes for a heartier meal.
- Store leftovers in the refrigerator for up to 3 days.
- Reheat gently with a splash of broth or cream to loosen the sauce.
