Description

Indulgent Creamy Tuscan Sun-Dried Tomato Chicken is a rich, one-pan meal featuring tender chicken simmered in a creamy garlic Parmesan sauce with sun-dried tomatoes and spinach.


Ingredients

  • 4 boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1/2 cup sun-dried tomatoes, chopped
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon dried Italian seasoning
  • 1/2 teaspoon paprika
  • 1 cup fresh spinach
  • Salt to taste
  • Black pepper to taste

Instructions

  1. Season the chicken breasts on both sides with salt, black pepper, and paprika.
  2. Heat olive oil in a large skillet over medium heat and sear the chicken for 4–5 minutes per side until golden brown. Remove and set aside.
  3. In the same skillet, sauté the minced garlic for about 30 seconds until fragrant.
  4. Add the chopped sun-dried tomatoes and cook briefly to release their flavor.
  5. Pour in the chicken broth, scraping up any browned bits from the bottom of the pan.
  6. Stir in the heavy cream, Parmesan cheese, and Italian seasoning. Simmer for a few minutes until the sauce slightly thickens.
  7. Return the chicken to the skillet, spoon sauce over the top, cover, and simmer for 10–12 minutes until the chicken reaches an internal temperature of 165°F (74°C).
  8. Stir in the fresh spinach and cook until wilted.
  9. Adjust seasoning if needed and serve warm with sauce.

  • Add sliced mushrooms for extra depth of flavor.
  • Substitute half-and-half for heavy cream for a lighter version.
  • Add a splash of white wine before simmering for added complexity.
