Ingredients

  • 4 cups chopped romaine or iceberg lettuce
  • 1/2 cup salami or pepperoni, sliced into strips or cubes
  • 1/2 cup diced ham or grilled chicken (optional)
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1/4 red onion, thinly sliced
  • 1/4 cup sliced pepperoncini
  • 1/4 cup black olives or Kalamata olives, sliced
  • 1/2 cup provolone or mozzarella cheese, cubed or shredded
  • 1/4 cup shaved or grated Parmesan cheese
  • 1/3 cup olive oil (for dressing)
  • 3 tbsp red wine vinegar (for dressing)
  • 1 clove garlic, minced (for dressing)
  • 1 tsp Dijon mustard (for dressing)
  • 1 tsp dried oregano (for dressing)
  • Salt and black pepper to taste (for dressing)
  • Optional: pinch of crushed red pepper flakes or sugar (for dressing)

Instructions

  1. Wash and chop all salad ingredients and place in a large mixing bowl.
  2. In a small bowl or jar, whisk together olive oil, red wine vinegar, garlic, Dijon mustard, oregano, salt, and black pepper until emulsified.
  3. Pour the dressing over the salad just before serving and toss well to combine.
  4. Top with shaved Parmesan and extra pepperoncini if desired.
