- 2 large sweet onions
- 8 oz cream cheese, softened
- 1 cup shredded cheddar cheese
- 2 jalapeños, finely diced (seeds removed for less heat)
- 1/2 teaspoon garlic powder
- Salt and pepper to taste
- 1 cup all-purpose flour
- 2 eggs
- 1/4 cup milk
- 2 cups bread crumbs or panko
- Oil for frying
Instructions
- Peel and slice onions into ½-inch rings and separate into full circles.
- In a bowl, mix cream cheese, cheddar, jalapeños, garlic powder, salt, and pepper.
- Take two similar-sized rings and fill the space between with cheese mixture, pressing gently to seal.
- Set up three bowls: one with flour, one with beaten eggs and milk, and one with breadcrumbs.
- Dip each ring in flour, then egg mixture, then breadcrumbs. Double dip in egg and breadcrumbs for extra crunch if desired.
- Heat oil in a skillet or fryer to 350°F (175°C). Fry rings in batches 2–3 minutes per side until golden.
- Drain on paper towels and cool slightly before serving.
Notes
- Add cooked chopped bacon to the filling for extra richness.
- Swap cheddar for pepper jack for added heat.
- Bake at 400°F for 20–25 minutes or air fry at 375°F for a healthier version.
