Ingredients
- 1.5 lbs boneless, skinless chicken thighs or breasts
- 3 tbsp olive oil
- 3 cloves garlic, minced
- 2 tbsp lemon juice
- 1 tbsp red wine vinegar (optional)
- 1 tsp dried oregano
- 1/2 tsp dried thyme or rosemary (optional)
- Salt and black pepper to taste
- 4 warm pita breads or flatbreads
- 1 cup tzatziki sauce
- 1/2 red onion, thinly sliced
- 1/2 cucumber, thinly sliced
- 2 tomatoes, sliced or chopped
- 1 cup lettuce or arugula (optional)
- 1/2 cup crumbled feta cheese (optional but recommended)
Instructions
- In a bowl, whisk together olive oil, garlic, lemon juice, oregano, vinegar, salt, and pepper.
- Add the chicken to the marinade, toss to coat, cover, and refrigerate for at least 30 minutes or up to 8 hours.
- Heat a skillet or grill pan over medium-high heat and cook the marinated chicken for 5–7 minutes per side until cooked through and slightly charred.
- Transfer the chicken to a cutting board, let it rest for a few minutes, then slice into thin strips.
- Warm the pita bread and spread a generous spoonful of tzatziki on each one.
- Layer sliced chicken, tomatoes, cucumbers, onions, and lettuce or arugula onto the pita.
- Sprinkle with crumbled feta, wrap tightly, and serve immediately.
