Description

Ingredients

  • 2 cups all-purpose flour
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 1/2 cup unsalted butter, softened
  • 3/4 cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 3/4 cup milk
  • 1 tsp dried culinary lavender, lightly crushed
  • 2 cups fresh or canned peaches, sliced
  • Optional glaze:
  • 1/2 cup powdered sugar
  • 12 tbsp milk or lemon juice
  • Pinch of lavender (optional)

Instructions

  1. Preheat oven to 175°C (350°F) and grease a cake pan.
  2. In a bowl, whisk together flour, baking powder, and salt.
  3. In another bowl, cream butter and sugar until light and fluffy.
  4. Add eggs one at a time, then mix in vanilla extract.
  5. Gently crush lavender and add to the batter.
  6. Alternate adding dry ingredients and milk, mixing until just combined.
  7. Pour batter into the prepared pan and arrange peach slices on top.
  8. Bake for 35–40 minutes until golden and a toothpick inserted comes out clean.
  9. Let cool completely before adding glaze if desired.
