Ingredients
- 2 cups all-purpose flour
- 2 tsp baking powder
- 1/2 tsp salt
- 1/2 cup unsalted butter, softened
- 3/4 cup granulated sugar
- 2 large eggs
- 1 tsp vanilla extract
- 3/4 cup milk
- 1 tsp dried culinary lavender, lightly crushed
- 2 cups fresh or canned peaches, sliced
- Optional glaze:
- 1/2 cup powdered sugar
- 1–2 tbsp milk or lemon juice
- Pinch of lavender (optional)
Instructions
- Preheat oven to 175°C (350°F) and grease a cake pan.
- In a bowl, whisk together flour, baking powder, and salt.
- In another bowl, cream butter and sugar until light and fluffy.
- Add eggs one at a time, then mix in vanilla extract.
- Gently crush lavender and add to the batter.
- Alternate adding dry ingredients and milk, mixing until just combined.
- Pour batter into the prepared pan and arrange peach slices on top.
- Bake for 35–40 minutes until golden and a toothpick inserted comes out clean.
- Let cool completely before adding glaze if desired.
