Lazy Man’s Pie Peach Cobbler is a quick and fuss-free Southern-style dessert where a simple batter rises through sweet, juicy peaches during baking, creating a golden, buttery crust on top and a gooey layer underneath.

  • Total Time: 55 minutes
  • Yield: 6–8 servings

Ingredients

  • 2 cans (15 oz each) sliced peaches in syrup (or 4 cups fresh peaches with added sugar and juice)
  • 1/2 cup unsalted butter
  • 1 cup all-purpose flour
  • 1 cup granulated sugar
  • 2 tsp baking powder
  • 1/4 tsp salt
  • 1 cup milk
  • 1 tsp vanilla extract (optional)
  • 1/2 tsp ground cinnamon (optional)

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Place butter in a 9×13-inch baking dish and melt it in the oven while preheating.
  3. In a mixing bowl, whisk together flour, sugar, baking powder, salt, milk, and vanilla (if using) until just combined.
  4. Pour the batter evenly over the melted butter in the baking dish without stirring.
  5. Spoon peaches with syrup evenly over the batter without stirring.
  6. Sprinkle cinnamon on top, if desired.
  7. Bake for 45–50 minutes, or until golden brown on top and bubbly around the edges.
  8. Let cool slightly before serving warm, optionally with vanilla ice cream or whipped cream.

Notes

  • Do not stir the batter and fruit—this creates the signature cobbler texture.
  • Fresh or frozen peaches can be used; sweeten them with sugar and ensure there’s juice.
  • Self-rising flour can replace all-purpose flour, baking powder, and salt.
  • Great served warm or at room temperature.
