Description

Ingredients

  • For the crust:
  • 1 1/4 cups all-purpose flour
  • 1/4 cup powdered sugar
  • 1/4 tsp salt
  • 1/2 cup (1 stick) unsalted butter, cold and cubed
  • 12 tbsp cold water, as needed
  • For the lemon filling:
  • 3 large eggs
  • 3/4 cup granulated sugar
  • 1 tbsp lemon zest
  • 1/2 cup fresh lemon juice
  • 1 tbsp cornstarch or all-purpose flour
  • 2 tbsp unsalted butter, melted and slightly cooled
  • For the topping:
  • 1 cup fresh blueberries
  • Optional: powdered sugar or extra lemon zest for garnish

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9-inch tart pan with a removable bottom.
  2. In a bowl, mix flour, powdered sugar, and salt. Cut in cold butter until mixture resembles coarse crumbs. Add cold water, 1 tbsp at a time, until dough just comes together.
  3. Press dough evenly into the tart pan. Prick bottom with a fork and bake for 15–18 minutes or until lightly golden. Let cool slightly.
  4. Meanwhile, whisk eggs, sugar, lemon zest, lemon juice, and cornstarch until smooth. Stir in melted butter.
  5. Pour filling into pre-baked crust and bake for 20–25 minutes, or until filling is just set. Cool completely at room temperature.
  6. Top cooled tart with fresh blueberries. Chill in the fridge for at least 1 hour before serving.
  7. Dust with powdered sugar or garnish with lemon zest before serving, if desired.
