- 1 cup all-purpose flour
- 1 cup granulated sugar
- 2 large eggs
- ½ cup unsalted butter, melted
- 3 tbsp fresh lemon juice
- 1 tbsp lemon zest
- ½ tsp baking powder

- 1 tsp vanilla extract
- Optional topping: powdered sugar or lemon glaze (1 cup powdered sugar + 2 tbsp lemon juice)
Instructions
- Preheat oven to 350°F (175°C). Grease or line an 8×8-inch baking dish with parchment paper.
- In a large bowl, whisk together melted butter and sugar until smooth.
- Beat in eggs one at a time, then stir in lemon juice, zest, and vanilla.
- Mix in flour, baking powder, and salt until just combined—do not overmix.
- Pour batter into prepared pan and smooth the top.
- Bake for 22–26 minutes, until edges are golden and a toothpick comes out clean.
- Cool completely before dusting with powdered sugar or drizzling with lemon glaze.
Notes
- For extra tang, add more lemon zest and a lemon glaze topping.
- Fold in white chocolate chips or top with cream cheese frosting for variety.
- Use a plant-based butter substitute for a dairy-free version.
- To double the recipe, bake in a 9×13-inch pan and add 3–5 extra minutes of baking time.
