Ingredients
- 1 pound chicken breast, diced
- 1 tablespoon olive oil
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 tablespoon fresh ginger, grated
- 1 teaspoon ground turmeric
- ½ teaspoon black pepper
- 1 teaspoon salt
- 6 cups chicken broth
- ¾ cup uncooked white or brown rice
- 2 carrots, sliced
- 1 cup celery, sliced
- 2 tablespoons fresh lemon juice
- 2 tablespoons fresh parsley, chopped
Instructions
- Heat olive oil in a large pot over medium heat. Add chopped onion and cook until softened.
- Stir in garlic and ginger and cook for 1 minute until fragrant.
- Add diced chicken and cook until just opaque.
- Sprinkle in turmeric, salt, and black pepper. Stir to coat the chicken evenly.
- Pour in chicken broth and bring to a gentle boil.
- Add rice, carrots, and celery. Reduce heat and simmer for 25–30 minutes until rice is tender and chicken is fully cooked.
- Remove from heat, stir in fresh lemon juice, and finish with chopped parsley.

- Stir in spinach or kale at the end for added greens.
