Description

Soft and buttery sugar cookies with a bright citrus twist from fresh lemon zest and juice. These tender cookies have slightly crisp edges and a chewy center, making them a refreshing homemade treat.


Ingredients

  • 2 1/4 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 3/4 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 large egg
  • 1 tablespoon lemon zest
  • 2 tablespoons fresh lemon juice
  • 1 teaspoon vanilla extract
  • 1/4 cup granulated sugar for rolling

Instructions

  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.
  3. In a separate mixing bowl, cream the softened butter and sugar together until light and fluffy.
  4. Mix in the egg, lemon zest, lemon juice, and vanilla extract until well combined.
  5. Gradually add the dry ingredients to the wet mixture and stir until a soft dough forms.
  6. Scoop small portions of dough and roll them into balls.
  7. Roll each dough ball in granulated sugar to coat the outside.
  8. Place the dough balls on the prepared baking sheet, leaving space between them.

  10. Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
