Ingredients
- 2 1/4 cups all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 3/4 cup unsalted butter, softened
- 1 cup granulated sugar
- 1 large egg
- 1 tablespoon lemon zest
- 2 tablespoons fresh lemon juice
- 1 teaspoon vanilla extract
- 1/4 cup granulated sugar for rolling
Instructions
- Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.
- In a separate mixing bowl, cream the softened butter and sugar together until light and fluffy.
- Mix in the egg, lemon zest, lemon juice, and vanilla extract until well combined.
- Gradually add the dry ingredients to the wet mixture and stir until a soft dough forms.
- Scoop small portions of dough and roll them into balls.
- Roll each dough ball in granulated sugar to coat the outside.
- Place the dough balls on the prepared baking sheet, leaving space between them.
- Bake for 10–12 minutes until the edges are lightly golden.
- Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
Notes
- Add a light lemon glaze made from powdered sugar and lemon juice for extra citrus flavor.
- Mix a little orange zest with the lemon zest for a citrus blend.
- Chill the dough for 30 minutes before baking for a softer texture.
