Ingredients
- 1.5 lbs boneless, skinless chicken breasts or thighs, diced
- 4 cups potatoes, diced into small cubes
- 2 tablespoons olive oil
- 1 (1 oz) packet ranch seasoning mix
- 1.5 cups shredded cheddar cheese
- 6 slices cooked bacon, chopped
- 2 green onions, sliced (optional for garnish)
- Salt and pepper to taste
- Sour cream for serving (optional)
Instructions
- Preheat oven to 400°F (200°C) and grease a large baking dish.
- Toss diced potatoes with olive oil, half of the ranch seasoning, salt, and pepper. Spread in the baking dish.
- Bake for 25 minutes, flipping halfway through.
- While potatoes bake, season diced chicken with remaining ranch seasoning.
- Remove dish from oven and top potatoes with seasoned chicken, shredded cheddar, and chopped bacon.
- Return to oven and bake for another 20 minutes until chicken is cooked through and cheese is bubbly.
- Garnish with sliced green onions and serve with sour cream if desired.
Notes
- Swap in sweet potatoes for a different twist.
- Add broccoli or other veggies to increase nutritional value.
- Use pepper jack cheese or hot sauce for a spicier version.
- Store leftovers in the fridge for up to 4 days.
