Ingredients
- 2 medium zucchini (cut into sticks)
- 1 egg (beaten)
- 1/2 cup panko breadcrumbs
- 1/4 cup grated Parmesan cheese
- 1/2 tsp garlic powder
- 1/2 tsp paprika
- Salt and pepper to taste
- Cooking spray or olive oil spray
Instructions
- Preheat air fryer to 400°F (200°C).
- Whisk the egg in a small bowl. In another bowl, mix breadcrumbs, Parmesan, garlic powder, paprika, salt, and pepper.
- Dip each zucchini stick into the egg, then coat with the breadcrumb mixture, pressing to adhere.
- Place coated zucchini in a single layer in the air fryer basket. Do not overcrowd.
- Spray the tops lightly with cooking spray.
- Air fry for 8–10 minutes, flipping halfway through, until golden and crispy.
- Serve warm with your favorite dipping sauce.
