Description

Ingredients

  • 1 1/4 cups all-purpose flour
  • 1/4 cup powdered sugar
  • 1/2 cup unsalted butter, cold and cubed
  • 1 egg yolk
  • 12 tablespoons cold water
  • 1 cup mango puree
  • 1/2 cup sugar
  • 3 egg yolks
  • 1 tablespoon lemon juice
  • 1/4 cup unsalted butter
  • 1 teaspoon lemon zest (optional)
  • Fresh mango slices for garnish (optional)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a mixing bowl, combine the flour and powdered sugar.
  3. Add the cold cubed butter and mix with a pastry cutter or fingers until the mixture resembles coarse crumbs.
  4. Add the egg yolk and 1–2 tablespoons of cold water, mixing gently until the dough comes together.
  5. Shape the dough into a disk, wrap it, and refrigerate for 30 minutes.
  6. Roll out the chilled dough and press it into a tart pan, covering the base and sides evenly.
  7. Prick the bottom with a fork and bake for 15–18 minutes until lightly golden. Let the crust cool completely.
  8. In a saucepan, combine mango puree, sugar, egg yolks, and lemon juice.
  9. Cook over medium-low heat while stirring constantly until the mixture thickens and coats the back of a spoon.
  10. Remove from heat and stir in the butter and lemon zest until smooth and glossy.
  11. Allow the curd to cool slightly, then pour it into the cooled tart crust and spread evenly.
  12. Refrigerate the tart for at least 2 hours until the filling sets.
  13. Garnish with fresh mango slices before serving if desired.
