Description

Marry Me Chicken Soup takes all the creamy, garlicky, romantic flavors of the beloved chicken dish and transforms them into a cozy, flavorful soup. With sun-dried tomatoes, Parmesan, and herbs in a rich broth, it’s perfect for comfort or impressing guests.


Ingredients

  • 1 lb boneless, skinless chicken breasts or thighs
  • 2 tablespoons olive oil
  • 1 small onion, diced
  • 3 cloves garlic, minced
  • 1/3 cup sun-dried tomatoes in oil, chopped
  • 4 cups chicken broth
  • 1 cup heavy cream or half-and-half
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon Italian seasoning
  • 1/4 teaspoon crushed red pepper flakes (optional)
  • Salt and black pepper, to taste
  • Fresh basil or parsley, for garnish
  • Optional: 1 cup cooked small pasta, spinach, or kale

Instructions

  1. Heat olive oil in a large pot over medium heat. Sauté diced onion until soft, about 3–5 minutes.
  2. Add garlic and chopped sun-dried tomatoes. Cook for another minute until fragrant.
  3. Season chicken with salt, pepper, and Italian seasoning. Add to the pot and lightly brown on both sides.
  4. Pour in chicken broth. Bring to a simmer and cook for 15–20 minutes, until chicken is cooked through.
  5. Remove chicken, shred with two forks, and return to the pot.
  6. Stir in heavy cream and Parmesan cheese. Simmer another 5–10 minutes until heated through and slightly thickened.
  7. Adjust seasoning. Add optional spinach or cooked pasta if desired.
  8. Garnish with fresh basil or parsley and serve warm.

Notes

  • Add spinach or kale at the end for extra greens.
  • Stir in cooked pasta, rice, or gnocchi for a heartier version.
  • Use rotisserie chicken to save time.
  • Wait to add cream if freezing—add after reheating.
  • Add a squeeze of lemon for brightness.
