Description

A comforting one-pan meal featuring crispy roasted gnocchi, savory meatballs, and colorful vegetables. This easy sheet pan dinner delivers rich flavor with minimal preparation and cleanup, making it perfect for busy weeknights.

Ingredients

  • 1 pound shelf-stable or refrigerated potato gnocchi
  • 1 pound cooked or frozen meatballs
  • 1 cup cherry tomatoes
  • 1 red bell pepper, chopped
  • 1 small red onion, sliced
  • 3 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 cup grated parmesan cheese
  • Fresh basil or parsley for garnish (optional)

Instructions

  1. Preheat the oven to 425°F (220°C) and line a large sheet pan with parchment paper.
  2. Add the gnocchi, meatballs, cherry tomatoes, chopped bell pepper, and sliced onion to the sheet pan.
  3. Drizzle olive oil over the ingredients.
  4. Sprinkle the minced garlic, Italian seasoning, salt, and black pepper over everything.
  5. Toss the ingredients gently until evenly coated.
  6. Spread everything into a single layer on the sheet pan to ensure even roasting.
  7. Bake for 20–25 minutes, stirring once halfway through cooking.
  8. Cook until the gnocchi are lightly golden and the vegetables are tender.
  9. Remove from the oven and sprinkle grated parmesan cheese over the top.
  10. Garnish with fresh basil or parsley if desired and serve immediately.

Notes

  • Add zucchini, mushrooms, or broccoli for extra vegetables.
  • Sprinkle red pepper flakes before roasting for a spicier flavor.
  • Drizzle marinara sauce over the finished dish for extra richness.
  • Chicken or turkey meatballs can be used instead of beef meatballs.
  • Spread the ingredients in a single layer to help the gnocchi become crispy.
  • Store leftovers in an airtight container in the refrigerator for up to 3 days.
  • Reheat in the oven at 350°F (175°C) for 10–12 minutes to restore some crispness.
  • Microwave individual portions for 1–2 minutes if needed.
