Description

Ingredients

  • 1 lb chicken breast, sliced
  • 2 tbsp olive oil
  • 2 cloves garlic, minced
  • 1 red bell pepper, sliced
  • 1 zucchini, sliced
  • 1 cup cherry tomatoes
  • 1/2 red onion, sliced
  • 1 tsp dried oregano
  • 1/2 tsp dried thyme
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1 tbsp lemon juice
  • Optional: feta cheese

  • Optional: fresh parsley

Instructions

  1. Heat olive oil in a large skillet over medium-high heat.
  2. Add sliced chicken and cook until browned and fully cooked, then remove from skillet.
  3. In the same skillet, add garlic, bell pepper, zucchini, cherry tomatoes, and red onion. Cook until slightly tender but still crisp.
  4. Return chicken to the skillet and add oregano, thyme, salt, and black pepper.
  5. Toss everything together and cook for a few more minutes to combine flavors.
  6. Drizzle lemon juice over the stir fry and mix well.
  7. Serve warm, topped with feta cheese, olives, or fresh parsley if desired.
