Ingredients
- 1/2 cup sun dried tomatoes, finely chopped
- 1/2 cup extra virgin olive oil
- 2 cloves garlic, minced
- 1 teaspoon dried oregano
- 1/2 teaspoon crushed red pepper flakes (optional)
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 2 tablespoons chopped fresh parsley
- 1 tablespoon lemon juice (optional)

Instructions
- Finely chop the sun dried tomatoes and place them in a small mixing bowl.
- Add the minced garlic and pour the extra virgin olive oil over the tomatoes.
- Mix in the dried oregano, crushed red pepper flakes, salt, and black pepper.
- Stir well so the ingredients combine and begin blending their flavors.
- Add the chopped fresh parsley and lemon juice if using.
- Mix again until the dip is evenly combined.
- Let the mixture rest for about 10 minutes so the garlic and herbs infuse into the olive oil.
- Stir once more and transfer to a serving dish.
- Serve with warm bread, crackers, or fresh vegetables.
Notes
- Chopped olives or capers can be added for a stronger Mediterranean flavor.
- Mix in grated parmesan cheese for a richer and slightly creamy dip.
- Fresh basil or thyme can be added for extra herbal notes.
- Pulse briefly in a food processor if you prefer a smoother spread.
- Store leftovers in an airtight container in the refrigerator for up to 5 days.
- Allow the dip to sit at room temperature before serving if the olive oil solidifies.
- Stir gently before serving to restore the texture.
