Ingredients

  • 1 (10 oz) can diced tomatoes with green chilies
  • 1 (14 oz) can cream-style corn
  • 2 cups shredded cheddar or Mexican cheese blend
  • 1 bag (about 9–10 oz) corn chips (Fritos, Doritos, etc.), divided
  • Optional: 1/2 cup sour cream or cream cheese
  • Optional toppings: sliced green onions, black olives, fresh cilantro, jalapeño slices

Instructions

  1. Preheat the oven to 375 °F (190 °C) and grease a 9×13‑inch baking dish.
  2. In a skillet, brown the ground beef with diced onion and garlic; drain excess fat.
  3. Stir in taco seasoning, diced tomatoes with chilies, and cream-style corn or cream cheese if using; simmer for 2–3 minutes.
  4. Spread half the corn chips over the bottom of the casserole dish.
  5. Spoon the beef mixture evenly over the chips.
  6. Sprinkle 1 cup of shredded cheese over the beef layer.
  7. Top with remaining chips and the remaining 1 cup of cheese.
  8. Bake for 15–20 minutes until cheese is melted and top chips are lightly toasted.
  9. Let the casserole rest for a couple minutes, then garnish with optional toppings before serving.
