Description

These mint chocolate chip protein balls are a no-bake, energizing snack that tastes like cookie dough but is made with wholesome ingredients. Perfect for workouts, school lunches, or an afternoon treat.


Ingredients

  • 1 cup oats (old-fashioned or quick oats)
  • 1/2 cup protein powder (vanilla or chocolate)
  • 1/2 cup nut butter (almond or peanut butter)
  • 1/4 cup honey or maple syrup
  • 1/3 cup mini chocolate chips
  • 1/4 tsp peppermint extract
  • 1/8 tsp salt
  • Optional: 1 tbsp cocoa powder
  • Optional: 1 tbsp chia seeds or flaxseeds
  • Optional: a few drops of green food coloring

Instructions

  1. In a large bowl, mix the oats, protein powder, and salt.
  2. Add the nut butter, honey or maple syrup, peppermint extract, and any optional ingredients. Stir until combined.
  3. Fold in the mini chocolate chips.
  4. Use a cookie scoop or spoon to form small balls, then roll them smooth between your hands.
  5. Place the balls on a lined tray and refrigerate for 20–30 minutes until firm.
  6. Store in an airtight container in the fridge or freezer.

  • Add cocoa powder for a richer chocolate flavor.
