These mint chocolate chip protein balls are a no-bake, energizing snack that tastes like cookie dough but is made with wholesome ingredients. Perfect for workouts, school lunches, or an afternoon treat.
Ingredients
- 1 cup oats (old-fashioned or quick oats)
- 1/2 cup protein powder (vanilla or chocolate)
- 1/2 cup nut butter (almond or peanut butter)
- 1/4 cup honey or maple syrup
- 1/3 cup mini chocolate chips
- 1/4 tsp peppermint extract
- 1/8 tsp salt
- Optional: 1 tbsp cocoa powder
- Optional: 1 tbsp chia seeds or flaxseeds
- Optional: a few drops of green food coloring
Instructions
- In a large bowl, mix the oats, protein powder, and salt.
- Add the nut butter, honey or maple syrup, peppermint extract, and any optional ingredients. Stir until combined.
- Fold in the mini chocolate chips.
- Use a cookie scoop or spoon to form small balls, then roll them smooth between your hands.
- Place the balls on a lined tray and refrigerate for 20–30 minutes until firm.
- Store in an airtight container in the fridge or freezer.

- Add cocoa powder for a richer chocolate flavor.
- Swap nut butter for sunflower seed or oat butter for a nut-free version.
- Add flax or chia seeds for a fiber boost.
