Ingredients
- 1 1/2 cups graham cracker crumbs
- 1/2 cup unsalted butter, melted
- 16 oz (2 packages) cream cheese, softened
- 1/2 cup granulated sugar
- 1 tsp vanilla extract
- 1 cup heavy cream
- 1/4 cup powdered sugar (optional)
- 1 can cherry pie filling (or fresh cherries in light syrup)
Instructions
- In a bowl, mix graham cracker crumbs with melted butter until well combined. Press into the bottom of a springform pan to form the crust.
- In another bowl, beat softened cream cheese with granulated sugar and vanilla extract until smooth and creamy.
- In a separate bowl, whip heavy cream (and powdered sugar if using) to soft peaks.
- Fold the whipped cream into the cream cheese mixture until fully incorporated.
- Spread the cheesecake mixture evenly over the prepared crust.
- Cover the pan and refrigerate for at least 4 hours, preferably overnight, to set.
- Before serving, top the set cheesecake with cherry pie filling or fresh cherry topping.

- Use Oreo or gluten-free cookie crumbs for crust variations.
- Switch the fruit topping with other berries or compote for variety.
